We are here to bring back the good fat! Schmaltz is the traditional cooking fat of the ashkenazi Diaspora living in Eastern Europe who rendered chicken fat seasoned with sliced onions as an alternative to the common pork lard. Schmaltz is the smell of Friday night’s chicken soup, Saturday morning breakfast potatoes, and stir-fry nights with the neighbors.
